In 2017, I heard about a new exciting restaurant in Copenhagen. I went to the small 15-seater bar, had 45 courses, and was blown away by the originality and the often controversial messages accompanying the dishes. I told the owner/chef Rasmus Munk that if he ever wanted to take this to the next level, I was in.

Shortly thereafter, we embarked on a massive project, creating a whole new, technology-based concept and two years later, we opened Alchemist in its second iteration. Despite a difficult start with the pandemic, the restaurant was successful from day one.

Alchemist now has two Michelin stars, is number 18 on the World’s Best Restaurants List, and currently has a waiting list of 35,000 guests.

What are Blue Cells?

Blue Cells are an allogeneic stem cell therapy product that works by promoting angiogenesis, repairing the endothelium, vascular smooth muscle, and neurons but also by inhibiting inflammation.

When I went to high school, almost every night I and a small group of close friends went to this iconic bar. Opening in 1977, it was one of the first French-inspired cafes in Copenhagen, and completely different from the drab, brown bodega scene that dominated Copenhagen in the seventies. Cafe Dan Turell quickly became a favourite hangout of artists, musicians and journalists.

Named after the great Danish poet Dan Turell (the founder was his publisher), the cafe went downhill in recent years, and I bought it in 2019. After a complete renovation to bring back its former glory, the cafe is now again filled with lights, cocktails, 80s music and I often hang out there myself when in Copenhagen.

I have followed the blockchain and crypto space for more than 10 years. Originally an enthusiastic ambassador for Bitcoin and Ethereum, I eventually became concerned about aspects hindering mass adoption, in particular anonymity, lack of scalability and a general mistrust of regulation.

Having been the co-founder and co-CEO of Saxo Bank for more than two decades, I became convinced that the same regulatory developments we experienced in TradFi would eventually also make their way to the crypto space. Therefore, I founded Concordium in 2018, a compliance-ready layer one blockchain that combines all the great features of a distributed, permissionless blockchain with a focus on ID and complying and accepting the general expectations of the society around us. After just a few editions, Enter Art Fair is now the largest art fair in Scandinavia and in 2022 had more than 70 Danish and international galleries presenting 250+ contemporary artists to around 20,000 guests.

Lars Seier Christensen, co-owner of the three-Michelin-starred Geranium (World’s Best Restaurant 2022) and two-Michelin-starred Alchemist, has joined forces with Mads Bøttger of the one-Michelin-starred Dragsholm Castle Gourmet. Together, they have partnered with Sir Niels Lan Doky, the knighted jazz pianist, composer, and producer celebrated for his extraordinary improvisations and collaborations with global luminaries.

Completing this exceptional team is Rasmus Shepherd-Lomborg, a visionary Danish bar entrepreneur who, alongside his Scottish wife Adeline, founded Ruby in 2007—a groundbreaking cocktail bar that sparked Copenhagen’s cocktail renaissance and has been featured six times on the prestigious World’s 50 Best Bars list.

Geranium was for a long time my favourite restaurant, so when the opportunity to invest in Geranium came about in 2015, I immediately decided to support the restaurant. As a result, the restaurant has since been in a position to continuously improve its locales, facilities and wine cellar. Unusually located in the Danish national football stadium, Parken, it sports beautiful views over most of Copenhagen.

Geranium was awarded three Michelin stars the first time in 2016 and has kept the highest rating of the Michelin guide ever since. After crawling up the list of the World’s 50 Best restaurants for several years, it finally topped the list in 2022, becoming The World’s Best Restaurant.

In 2018, I was presented with this website allowing people to test various aspects of their personality. The site is updated with new tests in multiple languages on a weekly basis, and manages more than 200 million personal tests annually, ranging from more fun tests, to deeply serious personality tests based on scientific input.

Mearto is an art valuation platform where sellers of art can get an initial estimate of the value of their items before deciding to proceed with an auction or a sale.

I invested in Mearto in 2018, and while still a small company, the number of auction items continues to rise as investment in art and antiques is a growing market, as low-interest rates for many years and overvalued stock markets have drawn ever more investors into new markets.

I became a shareholder in this listed company in 2019 when a large shareholding was placed for sale by a Danish pension fund. Best known for the ownership of Scandinavia’s premier football club, F.C. Copenhagen, current Danish champions, the group has multiple other activities. PSE owns the national stadium in Denmark, Parken, a 36,000 seater ground in central Copenhagen, as well as around 32,000 sqm of office space in the same building. PSE also owns the successful waterparks known as Lalandia, a thriving business with three large waterparks in various locations in Denmark. Lalandia’s concept is building and selling summer houses around the waterparks and then managing the ongoing rental of the approximately 2,000 summer houses. I truly enjoy watching F.C. Copenhagen play in the Danish Super League and internationally in the European tournaments where the club has an outstanding record of participating nearly every year in the group stages.

Built around curiosity and optimism, the platform challenges consensus, seeks nuance and uses technology as a tool to create overview, relevance and a more personal news experience.

In 2015, a good friend of mine offered me to buy half of Rungsted Ice hockey Club, located north of Copenhagen. After a hard time with bankruptcy prior to this partnership, the club is now in very good shape, having won two golds and one silver medal in the past three seasons, dominating Danish ice hockey for the first time in decades. I enjoy watching an occasional match in the friendly family atmosphere at the club’s stadium and look forward to continuing to play a significant role in developing Danish ice hockey.

I invested in SamlinoGroup in 2017, a Danish platform for offering the best pricing on various household services, such as telephony, TV packages, insurance and other common needs. The platform offers comparisons between different services and has now expanded to multiple European countries. The business is growing and expanding services with an increasing volume every year.

I once had a gallery in the art district of London, but sold this some years ago. This left me with a collection of around 50 works that forms the base of Seier Fine Arts. I am very interested in art and also have a fairly large collection privately, but at Seier Fine Arts we buy and sell art commercially. The stock currently includes Damien Hirst, Richard Prince, Al-Soudani, Cecily Brown as well as other interesting artists and we will actively buy well-priced art when offered to us.

Seier Wine is a wine investment company that supports my restaurant investments maintaining world-class wine lists. The company invested in inventory and maintains a deep and broad selection of particularly French, Italian and US wines.

Currently, Seier Wines provide wines for the wine cellars of Geranium, the world’s best restaurant 2022, Alchemist, Dan Turell and the Executive lounge at Rungsted Seier Capital, one of Denmark’s top ice hockey clubs.

SpeakerBee was launched in 2020 by me and a long-term associate during the pandemic as a “corona-gift” to the Danish public - a free knowledge-sharing platform based on video presentations. After the pandemic, SpeakerBee pivoted to a more professional production company and today has some of Copenhagen's best studio facilities, used by many large corporates for video production, virtual meetings and high-quality presentations. SpeakerBee studios are now also available in Denmark’s second-largest city, Aarhus. The ambition is to create an international network of quality studios in major cities, managed by our Command Central in Copenhagen for post-production and special projects with high requirements for production capabilities.

In 2019, I did a seven-programme startup series, “Vejen Til Seier” on one of the main Danish TV channels, TV2. The idea of the programme was to start with a large number of applicants and then filter the winner out via various real-life challenges, as my wish was to give the viewers an understanding of the real process you go through as an investor, rather than the pure pitch-based decisions in programmes like Shark Tank. While very entertaining, investment does not happen like this in the real world. The winner of my series was Spring Copenhagen, beating 700 applicants in the process.Spring Copenhagen revives various forgotten design classics and produces a new design based on wood. The investment has been very successful and Spring Copenhagen has multiplied its turnover manyfold since winning the competition and has a bright future ahead.

Spora is a global food research centre grounded in experimentation and dedicated to delicious innovation that can positively impact the lives of millions. Founded by Rasmus Munk in 2023 as the natural evolution of restaurant Alchemist, it brings gastronomic and scientific creativity to the development of new foods and technologies.

The research centre drives collaborative R&D programmes addressing global food system challenges, with initial work focusing on indulgent alternatives such as NOTCH, a chocolate-like treat created from spent grain, a by-product of beer brewing.

I invested in an early round in the Israeli lab-grown meat company, SuperMeat. I am convinced that food production will undergo significant changes in the coming decades, where focus on animal welfare, carbon footprint, medication and other challenges will become an increasing burden for traditional farm meat production. Companies like Supermeat deal with all of these challenges, while being an alternative to plant-based foods. Sustainably produced meat will not go out of fashion anytime soon and particularly not when solutions like these develop. Based on solid science, Supermeat is making great progress and attracting increasing attention from the food industry. The company’s products, focused on chicken, can be tested at an experimental restaurant in Tel Aviv.

Supertrends has (so far) used +75,000 AI prompts and queries to create the world\`s largest timeline of human innovation, including 16,000 historical milestones and 4,000 tech predictions. Also, it constantly monitors ca. 1,500 professional media and the top-1,000 business thinkers world-wide daily. From this, it auto-generates approx. 250 daily information summaries and insights. This is auto-combined with data on startups and markets to create a 4th generation tech- and business monitoring tool - delivered to users as Personal AI.

The Family, based in Paris, is an incubator for startups. Providing knowledge and experience in return for small stakes in new companies, The Family also arranges introductions to investors and has its own fund for incubation companies. Having been involved in hundreds of companies in the past decade, the take on helping startups succeed is a refreshing take on other incubators, where the focus is more on investment rather than on knowledge sharing.

During the pandemic, we experienced a large number of initiatives trying to contain the spread of Corona. Many of these initiatives were very expensive and sadly, highly inefficient. UV Medico delivers a scientifically solid and very tested solution via UV rays that destroys vira very quickly.

Until recent years, the 254 nm wavelength has been mostly used but has had a serious negative impact on humans, so has only been used to sterilise vacant rooms. The 222 nm wavelength has the same effect on vira, but does not have negative effects on humans, so can be used in rooms where humans are present. This represents a major step ahead, as many areas can now be cleared of vira, even when they are being used - examples could be restaurants, aeroplanes, ambulances, active operation theatres, public areas, concerts and large sports events. UV Medico offers a very important part of the solution to future epidemics as well as various industrial processes where products or areas need to be cleaned for various viruses and health threats. Already now, UV Medico has an impressive client group, counting major corporates and solving a variety of challenges for them.

I bought Villa Pacini in 2020, as I became enchanted by the beauty of the old villa and the great surroundings in Tuscany.

Located in the hills outside the historic town of Lucca, it has been fully refurbished and a new swimming pool has been installed in the grounds.

As the former home of a Tour de France winner, it has a full Service Course and is very suited for groups of cyclists, where the Villa management can supply catering, bikes, pro trainers, suggested routes and service vehicles.
